At BF Designs and Solutions, we can offer a full financial analysis of your restaurant’s menu, and remove the guesswork out of whether or not the items you are providing to your customers are measuring up. The relative performance of each menu item is determined and assigned one of the following terms:

STAR – Stars are extremely popular and have a high profit contribution margin. Ideally Stars should be your signature menu items.

WORK HORSES – Work Horses are high in sales but low in profit margin. Work Horse menu items sell well, but do not significantly increase profit revenue.

PUZZLES – Puzzles are generally low in sales, however high in profit margin. Puzzles items are difficult to sell but have a high enough profit margin, so you do not want to remove them from the menu.

DOGS – Dogs are low in sales and low in profit dollars. They are difficult to sell and produce little profit when they do. These are items that you may want to consider removing from your menu or revamping so they perform well enough to stay.

The verbiage on your menu is just as important as the food you serve.
